Cilantro-Lime Shrimp Skewers

- First chop up cilantro into tiny pieces.

- Then take shrimp pieces and add them on the skewer

- Set skewers flat on a cookie sheet

- Then squeeze fresh lime or lightly add lime juice on the shrimp to add flavor.  Flip over shrimp skewer and repeat step

- Take cilantro pieces and lay over the top of shrimp skewers.  Flip over shrimp skewer and repeat step.

- Let the skewers marinate for 2 hours

- Start making rice pilaf and cook till tender 

- Chop carrots and celery width-wise and squash length-wise into 1/8 thick slices.

- Add carrots and celery to the rice pilaf.  Stir until ingredients are well mixed

- Grill skewers and squash and flip occasionally until the shrimp is pink and the squash has grill marks.

-Place rice pilaf on the center of the dish, lay the shrimp skewers on top of the pilaf, add grilled squash to the dish, and serve.
